The NATFOODCOATING project (Project Nº. 14236) is devoted to the research and development of biobased coatings with enhanced antifungal activity, able to inhibit the sporulated fungi’s growth in food products, throughout their ripening and curing stages. The target coatings will be developed for: (i) cheese ripening; (ii) smoked artisanal sausages curing; and (iii) coatings of combined functionalities, i.e. antioxidant and antifungal, specifically designed for smoked products containing animal blood, leading to a marked increase of its shelf life. The targeted coatings will ultimately contribute for this food products shelf life and quality increase and leveraging their economical value.
